ohhh Queso (Vegan)
A healthy, plant based alternative to QUESOOOO!
Gather your ingredients
1 c. of RAW cashews ~ soaked
1/4 c. Nutritional Yeast
1 clove Garlic
1/4 Jalapeno
3/4 c. Non-Dairy Milk (I used coconut, almond works best!)
1/4 c. Vegan Cream Cheese (Mykonos brand is my favorite)
1 tbsp. Mustard Powder
1 tbsp. Onion Powder
1/2 tbsp. Paprika
Chili Powder
Salt & Pepp
Tortilla Chips & Nacho toppings
Noted: When I made this dish I never measured anything out. It was an honest experiment because I had oversoaked cashews that needed to be used. The result was great. I did my best to gauge what I think would work best, but feel free to play with the measurements! <3 Id love to hear how it turns out!!

For soaking cashews:
I used about 1 cup of cashews. Soaked in cold water/refrigerator for 32 hours because I totally forgot about the babes…but (NOT RECOMMENDED). Soak your cashews for 6-12 hours. Optional to this method is boiling them. BUT..Even with my over soaked nuts.. the queso turned out delish.
Add all ingredients to food processor.
Pulse Puree until you find the texture/flavor you like <3
